A delicious vegan side dish that will have people coming back for seconds!

Preparation: 15 minutes

To cook: 40 minutes

Level: Easy

Serves: 5

Ingredients

  • 3 whole Japanese yams (large)
  • 1-½ tbsp Olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Paprika
  • Salt and pepper

Preparation

Preheat oven to 415ºF and line a baking sheet with parchment paper.

Peel and cut your yams into similar sized cubes. Place in a bowl and combine the olive oil and seasonings. Continue mixing until evenly coated.

Place on baking sheet. Bake for 30-35 minutes (turn halfway through) and broil for 1-2 minutes. Let cool and serve immediately or store in a glass container.
