Roasted Garlic and Parmesan Sweet Potatoes are the perfect healthy side dish. These baked sweet potatoes bring a savory twist with the addition of garlic and parmesan cheese.
- 2 cups Sweet potato, peeled and cut into 1/2 inch cubes (about 1 medium sweet potato)
- 1 tbsp Melted butter
- 1 tbsp Olive oil
- 3 tablespoons Parmesan cheese, divided
- ½ teaspoon garlic powder
- ¼ teaspoons seasoned salt
In a bowl or large resealable bag, combine the sweet potatoes, melted butter, olive oil, 2 tablespoons Parmesan cheese, garlic powder and seasoned salt. Mix to coat.
Place coated sweet potatoes on a large baking sheet. Bake at 400ºF for 10 minutes. Take the dish out of the oven, stir. Add the remaining 1 tablespoon of Parmesan. Return the potatoes to the oven for an additional 8-10 minutes until cooked through and beginning to brown.
