Eating your vegetables doesn’t have to be a chore. The vinegar in these Roasted Brussels Sprouts makes them a special treat that won’t break your diet.

Ingredients
- 1-½ pound Brussels sprouts, quartered
- 1 whole Large onion, sliced
- 7 slices Thick bacon, cut in three
- 1 teaspoon granulated garlic
- 1 teaspoon Salt
- ¼ cups Balsamic vinegar
Preparation
Preheat the oven to 450ºF.
Place the quartered Brussels sprouts and the sliced onions in a greased roasting pan. Spread the bacon on top of the Brussels spouts and the onions. Try to cover as many Brussels sprouts as possible.
Roast for 10 minutes, then toss with garlic powder, salt and sprinkle with a tablespoon of balsamic vinegar.
Continue roasting for 10 minutes and toss with the remaining tablespoons of balsamic vinegar until caramelized and crispy, about 40 to 50 minutes.
