Ingredients
- 2 whole Acorn squash, sliced and seeded
- 2 tablespoons Olive oil
- ½ teaspoon Salt
- ½ teaspoon Pepper
- 1 teaspoon Cinnamon
- ½ teaspoon Nutmeg
- ½ teaspoon Coriander
Preparation
Preheat the oven to 375ºF. Prepare a large baking sheet with cooking spray.
Place the squash on a baking sheet and drizzle with olive oil. Season with salt, pepper, cinnamon, nutmeg and coriander. Toss to combine, then lay the squash flat on a baking sheet.
Bake for 45-50 minutes, until softened. Remove from oven and serve.
