Roasted acorn squash is a super easy and healthy side dish for fall!

Preparation: 15 minutes

To cook: 45 minutes

Level: Easy

Serves: 8

Ingredients

  • 2 whole Acorn squash, sliced ​​and seeded
  • 2 tablespoons Olive oil
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • 1 teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • ½ teaspoon Coriander

Preparation

Preheat the oven to 375ºF. Prepare a large baking sheet with cooking spray.

Place the squash on a baking sheet and drizzle with olive oil. Season with salt, pepper, cinnamon, nutmeg and coriander. Toss to combine, then lay the squash flat on a baking sheet.

Bake for 45-50 minutes, until softened. Remove from oven and serve.
