Here is a recipe that I like to make for family gatherings. So easy and can be made a day ahead.
- 5 pounds Red Potatoes (9 large), diced and unpeeled
- 6 ounces, weight Cream cheese
- 1 cup Sour cream
- 2 teaspoons onion salt
- 1 teaspoon Kosher salt
- ½ teaspoon Black pepper
- 8 tablespoons Butter
Cook the potatoes in salted boiling water until tender. Drain. Mash until smooth. Add the rest of the ingredients and beat until light and fluffy.
Place in a greased oblong mold. Let cool, cover and place in the fridge. Can be used anytime within two weeks. May reheat in microwave or 350ºF oven until heated through, about 20-30 minutes.
