This sugar-free mojito is only 130 calories and so easy to make! Perfect for the 4th of July!
- 1 Large lime, sliced
- 16 Mint leaves
- 4 teaspoons Monkfruit Sweetener, Or To Taste
- 2 tablespoons Fresh blueberries
- 2 Big strawberries
- 3 ounces, liquid White Rum
- 1 cup coconut water
Divide the lime slices and mint leaves into highball glasses and use a pestle to crush them until the limes have released their juice and the mint has broken down.
Divide the monkfruit (I like 2 tsp per mojito, but you can start with less if you like) between the glasses, along with the blueberries and strawberries. Blend again until the fruit is mostly broken down, but a few chunks still remain.
Divide the rum and coconut water between the glasses and fill with ice. Stir well and drink!
