Rice is one of my favorite side dishes. This hot red tex-mex rice is a one pot rice recipe that takes about 20 minutes to prepare.

- ½ Onion
- 1 clove Garlic
- 1 spring onion
- 150 grams Cherry tomatoes
- 2 tablespoons Vegetable oil
- 1 cup Basmati rice
- ¾ cups Sieved tomatoes
- 2 cups Vegetables soup
- ½ teaspoon chili powder
- 1-½ tsp Cumin
Preparation
Finely chop the onion, garlic and spring onion. Quarter of cherry tomatoes.
Heat the skillet over medium heat, add vegetable oil to the skillet and let warm. Sauté chopped onion and garlic until soft and translucent.
Add the rice. Mix the rice well so it can absorb the oil and liquids from the onion and garlic. Add the sifted tomatoes, stirring the rice. Add the vegetable broth and slowly bring to a boil, adding the chili powder and cumin. Leave to boil for a short time before adding the spring onions. Finally add the cherry tomatoes.
Let simmer for 15 minutes over medium heat. Stir after about 5 minutes. Bake 15 more minutes, then fluff with a fork.
