Ingredients
- 50 grams quinoa
- 50 grams whole cream cheese
- 1 whole Big Red Pepper
- 1 slice Emmental
Preparation
Preheat the oven to 350°F (180°C).
Rinse the quinoa under cold water. Add to a small saucepan and add double the amount of water. Place over medium heat and bring to a boil. Reduce the heat and cook for about 10 to 15 minutes, until there is no water left in the pan. Leave to cool for about 15 minutes.
In a small mixing bowl, combine cream cheese and quinoa until evenly incorporated.
Stuff the pepper with the mixture. Add a slice of Emmental on top to cover the stuffing. Bake for about 25 to 30 minutes.
