There are days when you really want to have a delicious salad filled with vegetables and healthy oils. Greek salad is a delicious way to pack those nutrients.

Ingredients
- FOR THE CHICKEN SHAWARMA:
- 1 pound Chicken thighs
- 3 tablespoons Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- ½ teaspoon Allspice
- ½ teaspoon Turmeric
- 1 teaspoon garlic powder
- ½ teaspoon Salt
- FOR THE SALAD:
- 2 cups romaine lettuce, chopped
- ½ cups Cucumber, sliced
- ⅛ cups pickled onions
- ¼ cups Tomatoes
- 5 whole Kalamata olives
- 3 whole Marinated artichoke hearts
- 1 tbsp Feta cheese
- ¼ cups Mushrooms of Paris
Preparation
Combine all the ingredients for the chicken shawarma and marinate in the refrigerator, covered, for up to 1 day.
Preheat the oven to 400ºF. Bake marinated chicken for 20 minutes or until cooked through.
Slice the chicken and serve 1 chicken leg in a bowl with the salad ingredients. Keep the rest of the chicken for your future salads.
