- 2 cups All purpose flour
- 2 teaspoons baking powder
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 2 teaspoons Pumpkin Pie Spice
- ½ cups light brown sugar
- 1 box pure pumpkin
- 2 Eggs, yolks and whites separated
- 1-¼ cup Plain Greek yogurt
- ¾ cups Milk (any type)
- 1 teaspoon Vanilla extract
Preparation
Preheat the waffle iron according to the instructions for your model.
In a large bowl, combine the flour, baking powder, baking soda, salt and pumpkin pie spice. Put aside.
In a medium bowl, add brown sugar, pumpkin, egg yolks, yogurt, milk and vanilla. Beat until combined with an electric hand mixer or stand mixer with a built-in paddle attachment.
Pour pumpkin mixture into flour mixture and beat until just combined. Put aside.
In another medium bowl, beat the egg whites until stiff, about 3 to 4 minutes. Gently fold into the batter.
Lightly grease the waffle maker with nonstick cooking spray, if necessary. Add the batter and cook until lightly browned and cooked through, about 3 to 4 minutes.
Serve immediately with butter and hot maple syrup, if desired. Enjoy!
