- 1 cup Medjool dates, pitted
- ½ cups Nut
- ⅓ cups Pumpkin puree
- ¼ cups Hemp seeds
- 1 teaspoon Vanilla
- ½ teaspoon Rodelle Pumpkin Spice Extract
- Pinch of salt
- ¼ cups coconut sugar
- 2 teaspoons Ground cinnamon
Preparation
Put the dates in a bowl and cover with water. Leave to soak for 10 minutes, then drain.
Place the nuts in a food processor and process until finely ground. Add the rest of the ingredients, including the soaked dates. Pulse until well blended. Adjust the spices to taste. Place in the refrigerator for at least 30 minutes to chill.
Mix the coconut sugar and cinnamon in a deep plate. Use your hands to form the dough into small balls and roll them in the cinnamon-sugar mixture. Store the finished balls in the refrigerator in an airtight container.
