Pork loin marinated and then dehydrated into a jerky is a great gift this time of year, especially for jerky lovers.

Ingredients
- 1-½ pound Pork loin, defatted, cut into 1/2-inch medallions across the grain
- 1 tbsp Worcestershire Sauce
- 1 tbsp light brown sugar
- 1 tbsp Light soy sauce
- 1 teaspoon salt
- 1 teaspoon Cracked black pepper
- 2 dashes Hickory Liquid Smoke Flavor
- ½ teaspoon garlic powder
Preparation
Slice the pork loin. I like to have mine almost slightly frozen so it’s much easier to slice and you get really even slices.
Combine everything except the pork in a bowl. Mix well. I like to use disposable plastic kitchen gloves when mixing, so if you have them, tie them in place. Add the pork and make sure all the pork is completely marinated, massaging gently if possible. Cover the bowl and place in the refrigerator to marinate overnight or at least 4 hours.
Prepare the food dehydrator. Make sure the grates are cleaned and everything is ready to go. Take the lower basket and start arranging the pork pieces around the tray. Keep in mind that some dehydrators come in different shapes, so the grates can be rectangular. (If you cook, search online for how to make oven jerky.) Don’t overcrowd or overlap the pieces of pork.
Continue with the pork on the remaining racks of the dehydrator. Stack the racks accordingly, cover and turn on the dehydrator. For the most part you are done and just have to wait about 5 hours for the pork to be jerky.
