Ingredients
- £4 Pork belly
- 3 tablespoons Olive oil
- 1 cup Rub dry
- 2 cups barbecue sauce
- FOR THE DRY RUB:
- 1 cup brown sugar
- ½ cups Kosher salt
- 4 tablespoons smoked paprika
- 2 tablespoons Black pepper
- ½ tablespoon Cumin
- ½ tablespoon onion powder
- ½ tablespoon garlic powder
- 1 teaspoon Cayenne pepper
Preparation
In a medium bowl, combine all the dry marinade ingredients.
Preheat grill to 250ºF. Trim excess fat and skin from meat. Place pork in aluminum foil. Drizzle with olive oil and rub generously with the spice blend (you will have excess spice blend – reserve for another use). Wrap in foil. Bake for about 4 hours.
Cut into strips about 4 inches. Drizzle with barbecue sauce. Bake another 45 to 60 minutes.
