- ½ cups Unsweetened shredded coconut
- ¾ cups Almonds, chopped
- 8 cups Plain popcorn
- 2 cups Old fashioned rolled oats
- ½ cups Raisins
- ½ cups Thinly sliced dried apricots
- ¾ cups Dear
- ¾ cups Packaged light brown sugar
- ¼ teaspoons Salt
Preparation
Preheat the oven to 350ºF.
Spread coconut on an ungreased baking sheet and bake until lightly toasted, stirring once or twice, about 5 minutes. Transfer to a bowl to cool. Wipe the baking sheet and spread the almonds on it. Cook until golden and fragrant, 5 to 7 minutes, stirring once or twice. Transfer to a bowl with the coconut to cool.
Lightly spray a 9×13-inch baking dish with cooking spray. In a large bowl, combine popcorn, oats, coconut, almonds, raisins and apricots.
In a small saucepan over low heat, combine honey, brown sugar and salt. Cook, stirring, until the sugar dissolves, about 5 minutes. Pour the honey mixture over the popcorn mixture. Stir until all ingredients are well coated and there are no dry spots.
Transfer the mixture to a baking dish. Using lightly moistened palms, firmly press mixture into baking dish. Refrigerate at least 30 minutes before cutting into bars.
