- 2 books Potatoes, peeled
- 1 medium onion
- 2 Eggs
- 2 cloves Garlic, minced (optional)
- Salt and pepper to taste
- 2 tablespoons All purpose flour
- Olive oil, for frying
- Sour cream, for serving
- Chives to serve
Preparation
Grate the potatoes and onion with a food processor or manually. Strain the mixture, discarding the liquid, but reserving the cornstarch.
In a bowl, beat the eggs with the garlic (if using), salt and pepper. Combine potato and onion mixture, beaten eggs and starch. Add the flour and mix well.
Heat the olive oil in a heavy bottomed skillet. Using a tablespoon, drop some of the mixture and spread it in a circle. Cook both sides until golden brown. When done, pat the pancakes dry with paper towel. Repeat with the rest of the mixture.
Serve with a little sour cream and chopped chives.
