Pisto Manchego is the Spanish version of ratatouille. It is made with the best flavors of summer: zucchini, tomatoes, onions and peppers.

Ingredients
- ½ cups Olive oil
- 2 Medium or 1 large onion, chopped
- 2 cloves Finely chopped garlic
- 4 Baby zucchini, diced
- 1 Red pepper, chopped
- 1 Green pepper, chopped
- 2 Large beef tomatoes or 4 medium tomatoes, peeled and diced
- Salt and pepper
- 2 tablespoons Chopped parsley
Preparation
Heat the olive oil over medium heat in a large skillet or cazuela. Add onion and garlic and sauté gently until translucent.
Add the vegetables and season with salt and pepper to taste. Let the vegetables cook over medium heat until most of the liquid has evaporated, about 30 minutes.
