Refreshing cocktail made with simple syrup, fresh ginger, honey, lime and tarragon.

Ingredients
- 2 rooms (2 inch size) fresh ginger, sliced
- 1 tbsp Raw honey or maple syrup
- 8 strands Tarragon, divided
- 1-½ cup Pimm’s No. 1
- 1 whole Lime, thinly sliced
- 1-½ cup carbonated water
- 1 whole Cucumber, cut lengthwise, into 8 wedges
Preparation
Bring 1 cup of water to a boil. In a heatproof mug or bowl, pour boiling water over the ginger slices. Let steep for 20 minutes, or overnight.
Stir in raw honey. Remove the bottom leaves from half the tarragon sprigs and add to the ginger water, then the Pimm’s and lime slices. Refrigerate for 10 minutes, then add sparkling water.
Fill punch, Tom Collins or pint glasses with ice and divide the Pimm’s mix between them. Garnish with 2 cucumber wedges and remaining tarragon sprigs.
