Perfect Prime Rib is a delicious meal choice for your New Year’s Eve or Christmas Day dinner!
- 1 whole (Size 7-8lb) Standing Rib Roast
- 2 tablespoons Sea salt
- 2 tablespoons Black pepper
- 2 tablespoons Dried oregano
- 2 teaspoons garlic powder
Remove standing rib roast from packaging and let sit at room temperature for 30 minutes. Using a sharp knife, cut crosswise slits about 1/4 inch deep all the way through the roast.
In a small bowl, mix the seasonings and generously rub the roast.
Preheat the oven to 450ºF.
Place the roast in a roasting pan and cook for 20 minutes to brown the outside. Reduce heat to 325ºF and cook 12 minutes per pound.
Use a meat thermometer to measure doneness. Medium rare registers 120ºF. Let stand 10 minutes. Slice and serve.
