Delicious chocolate peppermint treats baked to perfection and topped with a colorful red and white chocolate peppermint kiss. They are the perfect addition to your holiday baking list.
- 1 cup Softened butter
- ½ cups Sugar
- ½ cups brown sugar
- 2 Eggs
- 1 teaspoon mint extract
- 1-½ cup All purpose flour
- ⅔ cups Cocoa
- ¼ teaspoons Salt
- ¼ teaspoons baking powder
- ¼ teaspoons Baking soda
- 28 Unwrapped Peppermint Kisses
Beat butter and both sugars in mixer until light and fluffy. Add the eggs one at a time and mix until incorporated. Mix the mint extract.
Whisk together flour, cocoa, salt, baking powder and baking soda in a medium bowl. Add the dry mixture to the butter mixture in three parts. Blend after each addition until well combined, scraping the side of the mixer bowl as needed. Remove bowl from mixer, cover and refrigerate for at least 3 hours up to overnight.
When you’re ready to bake, preheat the oven to 350ºF. Cover baking sheets with parchment paper or silicone mats.
Butter hands and roll dough into 1-inch balls. Place on a cookie sheet with 1-2 inches between the cookies.
Bake for 10 minutes. Let cool for only 3 minutes. Press a peppermint kiss into the top of each cookie. Carefully move to the cookie cooling racks.
