Fennel and Pear Arugula Salad is a very bright and refreshing salad bursting with distinct flavors. It is perfect for a light meal, side dish or entrée. The salad offers very distinct gourmet flavors, it gives you the impression of eating a delicious salad in an upscale restaurant.

Ingredients
- 1 bulb Fennel
- 1 whole Pear
- 2 cups Rocket
- 2 ounces, weight Feta cheese, crumbled
- ½ cups candied nuts
- FOR SCREWING:
- ¼ cups Orange Muscat Champagne Vinegar
- ⅓ cups Avocado oil
- 1 teaspoon My dear
- Salt and pepper to taste
Preparation
Thinly slice the fennel with a mandolin. You can also use a knife, but a mandolin is much easier. Julienne the pear (I like to use a julienne peeler). Add to a salad bowl and mix with the arugula.
For the dressing, mix the muscat orange champagne vinegar (Trader Joe’s product), avocado oil, honey, salt and pepper.
Pour the amount of dressing desired in the salad and finish the salad by adding feta cheese and candied walnuts (I used commercial candied walnuts to save time). Enjoy!
