Large batch (20 cups) of snacks. Only 15 minutes of preparation and 30 minutes of configuration. Perfect snack all year round or split, wrap and gift.
- 15 cups popped popcorn
- 2-½ cups Crispy rice cereal, such as Rice Krispies
- 1 box (Size 9 1/2 oz) Salted Peanuts
- 1 pound White almond bark (candy coating)
- ¼ cups Peanut Butter
- 1 cup (or more, if desired) Candy-coated peanut butter candies, such as Reese’s Chunks
In a very large bowl, combine popcorn, cereal and peanuts. Put aside.
Break up the almond rind and put it in a medium sized microwave safe bowl. Add the peanut butter to the bowl and microwave on medium power, stirring occasionally, until all the almond rind is melted, 2 to 3 minutes. Mix well the almond bark and the peanut butter.
Pour half of the almond bark/peanut butter mixture over the popcorn mixture and mix well. Pour the remaining almond rind and peanut butter mixture over the popcorn mixture and stir until well coated. Stir in the candies.
Put 2 long sheets of wax paper or parchment on the counter and pour in the popcorn mixture, spreading it evenly. Leave on for at least 30 minutes. Break into pieces and serve. Store in a covered container at room temperature.
