Ingredients
- 16 tablespoons Softened butter
- ½ cups Sugar
- ½ cups brown sugar
- 2 Eggs
- 1 teaspoon Vanilla extract
- ½ cups Peanut Butter
- 2-¼ cups Flour
- 1 teaspoon Baking soda
- 1 teaspoon Salt
- 11 ounces, weight dark chocolate chips
Preparation
Preheat the oven to 375ºF. In the bowl of an electric mixer, beat the butter, sugar and brown sugar on medium speed until light and fluffy, about a few minutes. Reduce the speed to low and add 1 egg at a time, making sure to wipe down the sides and bottom of the bowl between each addition. Beat in vanilla extract and peanut butter on low speed until just combined.
In a small bowl, combine the flour, baking soda and salt. With the mixer on low, slowly add the flour mixture into the butter and peanut butter mixture. Mix until a dough forms, about 1 minute.
Using a rubber spatula, fold the chocolate chips into the batter until fully incorporated. Drop the dough in round tablespoons onto an ungreased baking sheet, spacing them at least a few inches apart. Bake the cookies for 10 to 12 minutes or until the tops are lightly browned and being careful not to overcook the bottoms of the cookies.
Remove the cookies from the oven and let cool for a few minutes on the baking sheet before transferring them to a wire rack to continue cooling. Enjoy!
