Ingredients
- 1 tbsp Butter
- 3 sliced peaches
- 3 tablespoons brown sugar
- ⅛ teaspoons Cinnamon
- ⅛ teaspoons Vanilla
- 1 loaf Fresh white bread
- 2 large eggs
- ¼ cups Milk
- ½ cups Chopped nuts, toasted
- Powdered sugar for topping
Preparation
Start by melting the butter in a medium saucepan over medium heat. Add sliced peaches, brown sugar, cinnamon and vanilla. Once it comes together and the peaches start to soften, add water (about 1/4 cup or less) to create a syrup. Remove the peaches from the heat after about 3-4 minutes (you don’t want them to be super soft, you’re just merging the flavors here).
Take slices of bread and carefully cut a slit or peg in the center, starting at the top. Pull gently to create a pocket for your peaches.
In a dish or bowl, beat the eggs with the milk.
Gently stuff the bread with the cooked peaches (try to reserve some of the syrup). Dip both sides of bread in egg mixture and place in skillet over medium-high heat. Cook for about 2 minutes on each side.
Remove from pan and serve topped with toasted walnuts, powdered sugar and reserved peach syrup!
