Bright and cheerful, sweet and creamy, with a lovely fruity flavor and just a hint of spiciness, this is my favorite dessert. I’m sure once you taste it, it will be your favorite too!

Level: Easy
Serves: 2
Ingredients
- ¾ cups Fresh raspberries, plus 10 whole raspberries, divided
- 1-½ tbsp Sugar Confectioners
- 4 Breyers French Vanilla Ice Cream Scoops (or use your favorite brand), divided
- 1 box (15 oz size) sliced peaches in 100% juice, drained
- Real whipped cream, for serving (optional)
Preparation
In a colander, rinse the fresh raspberries under cold water and drain them on absorbent paper. Reserve 10 whole raspberries. Mash the remaining 3/4 cup raspberries in a bowl.
Using the back of a spoon, strain the raspberry purée through a fine-mesh strainer with a bowl underneath to separate the sauce from the pips. Try to get as much sauce as possible from the raspberries.
Add the sugar to the raspberry sauce and whisk until dissolved.
For each dessert, add 2 scoops of ice cream in a bowl. Add 4 peach slices. Drizzle with raspberry sauce. Add 5 whole raspberries. Garnish with whipped cream, if using, and serve immediately.
