Sweet parsnip combined with silky mashed potatoes flavored with rosemary. A great festive side dish!

Ingredients
- 150 grams Peeled floury potatoes, such as Maris Piper
- 75 grams Peeled parsnips
- 10 grams Butter
- 1 tbsp Sour cream
- 2 strands Rosemary
Preparation
Chop the potatoes and parsnips. Cut the potatoes into large pieces and the parsnips into small pieces.
Place the potatoes and parsnips in a saucepan. Cover with cold water and add a good pinch of salt. Place on a baking sheet over high heat. Bring to a boil and cook for about 20 minutes, until tender.
Drain the potatoes in a colander and use a potato masher to mash the potatoes in the pan. You can use a potato masher and bowl if you prefer.
Add butter, sour cream and rosemary and mix well. Serve and enjoy!
