A side dish of creamy and fluffy mashed potatoes with freshly grated parmesan cheese and peppery arugula. Serve it with a variety of dishes such as grilled meats or stews. Yum!

Ingredients
- 200 grams Potatoes
- 25 grams Fresh cream
- 15 grams Parmesan cheese
- 1 tbsp Semi-skimmed milk
- ⅓ cups Arugula (arugula)
Preparation
Bring a pot of salted water to a boil. Meanwhile, peel and cut the potatoes into approximately 3-inch pieces. Add potatoes to boiling water and cook for about 15 minutes, until potatoes are easily pierced with a fork.
Using a potato masher (or potato masher), mash the potatoes so that no lumps remain and you have a smooth texture. While still hot, add the fresh cream and parmesan and mix well. Add the milk, little by little, and mix. Finally, add the arugula and stir until evenly distributed.
Serve hot. You can briefly return the pan to the hob, stirring well, if the mash has cooled too much. If desired, serve with a knob of butter on top for added flavor and silkiness.
