Tender yet crispy, with hints of salty, citrus and nutty goodness. This Parmesan Roasted Broccoli really kicks things up a notch! The perfect easy-to-prepare vegetarian side dish for any meal.
- 6 cups Broccoli florets
- 2 tablespoons Olive oil
- ¼ teaspoons Salt
- ½ teaspoon Red pepper flakes
- ⅓ cups Freshly grated parmesan cheese
- ¼ cups Flaked almonds
- 1 tbsp Lemon juice
Preheat the oven to 425ºF.
Cut the broccoli florets into equal bite-size pieces and toss them in a bowl with olive oil to coat them well. Spread the broccoli on one or two baking sheets so as to leave a little space between each floret. Sprinkle with salt, red pepper flakes if using, and freshly grated Parmesan cheese.
Bake for 10 minutes. Remove from oven and sprinkle with slivered almonds. Return to the oven and cook for an additional 5-7 minutes, watching carefully that the almonds do not burn.
=Remove from the oven, cover evenly with lemon juice and serve as an accompaniment to your favorite main course!
