Ingredients
- ¼ cups Butter
- ½ cups Onion, chopped
- ¼ cups Plain flour
- 4 cups Chicken broth
- 1 pint Half and half cream
- ½ pound Frozen broccoli, chopped
- 1 cup Carrots, julienned
- 2 cups Grated cheddar cheese
- Salt and pepper to taste
Preparation
In a large saucepan over medium heat, melt the butter. Add chopped onions and sauté until soft.
Add the flour to the melted butter and the onions. Whisk to combine and cook for 3-4 minutes. Be sure not to burn.
Slowly stir in the chicken broth and half and half. Simmer the mixture for 15 to 20 minutes, stirring often.
Reduce heat to medium-low and add frozen chopped broccoli and carrots. Bring the mixture back to a boil and cook for 20 to 25 minutes or until the broccoli is tender.
Stir in grated cheddar cheese until melted. Season with salt and pepper to taste.
