I was sitting around in the dark, reading a previously read short story by Edgar Allan Poe, when the idea of inventing a weekend brunch recipe came to me. Thus was born the POE dish, an acronym for Pancake Omelette Envelope.

Ingredients
- 1 cup Flour
- 1 teaspoon Salt
- 5 whole Eggs
- ½ Onions, coarsely chopped
- ½ Pepper, coarsely chopped
- 5 grams Butter without salt
Preparation
In a bowl, add the flour and 1/2 teaspoon of salt. Add the eggs and stir with a fork until smooth. Add the onions and bell pepper and season with the remaining salt.
Melt the butter in a nonstick skillet over medium heat. Pour half of the mixture into the mold and spread it like a pancake. Cook for 5 minutes. When the sides start to separate from the mold and the center is cooked, fold like an envelope. Let stand in pan for 1 minute before transferring to a plate. Repeat with the rest of the mixture.
