Paleo Cauliflower Mashed Potatoes with Pumpkin Seed Scallion Pesto.
- 1 head (Large) Cauliflower, cut into small florets
- Sea salt
- 2 tablespoons coconut oil
- 4 Green onions, coarsely chopped, plus more for garnish
- 1 clove Garlic
- 1 tbsp Lemon juice
- ⅓ cups Olive oil
- Pumpkin seeds, for garnish
Bring a large pot of salted water to a boil. Cook cauliflower until tender, about 10 minutes. Drain very carefully and return to the pot. Add coconut oil and mash cauliflower until smooth. Taste for seasoning and add more salt if needed.
Meanwhile, prepare the pesto: blend the green onions, garlic, lemon juice, olive oil and ½ teaspoon salt until smooth.
Transfer mashed cauliflower to a bowl and top with pesto. Garnish with pumpkin seeds and green onions and serve.
