Ingredients
- FOR THE CAKE:
- 260 grams Natural Yogurt Without Dairy Products
- 3 Eggs
- 1 Orange, zesty
- 80 milliliters Vegetable oil
- 210 grams Gluten-free self-rising flour
- 180 grams Caster sugar
- 55 grams desiccated coconut
- FOR THE GLAZE:
- 60 grams Icing sugar
- 2 tablespoons Orange juice
- Dried coconut and orange zest for garnish
Preparation
Preheat the oven to 180°C (355°F).
Whisk the yogurt, eggs, zests and vegetable oil. Add the flour, caster sugar and coconut.
Pour into an 8 x 8 inch lined cake pan. Bake for 35 minutes. Remove from pan and let cool completely.
Make the glaze by mixing the icing sugar and orange juice. Drizzle over the cake and sprinkle with grated coconut and orange zest.
