Onigiri (oh-nee-gee-dee) are Japanese rice balls filled with savory tuna or chicken salad and wrapped in nori. They’re easy on-the-go snacks, they’re so much fun to make, and they’re absolutely delicious. Check out my blog for a full tutorial if you want to see how they are made.
Note: You will also need an onigiri mold.

Level: Intermediate
Ingredients
- 3 cups Cooked sushi rice (or any rice that sticks together when compressed)
- 1 cup Your favorite tuna salad or chicken salad
- 1 Sheet of nori (sushi wrapper or seaweed), cut into strips approximately 1 X 4 inches
Preparation
Place a few tablespoons of rice into an onigiri mold, pressing down on the bottom and sides of the mold, but leaving an indentation for filling (if you don’t have a mold, you can use the palm of your hand ). Place a tablespoon of savory toppings like tuna salad or chicken salad in the center of the rice; cover with more rice until pan is filled.
Place the lid on the mold and press gently to compress the rice. Remove the lid and carefully unmold by pressing the release tab on the back of the mold. Place the nori strip on the table, shiny side down, and place the onigiri on the strip as shown. Pull both ends of the nori up on either side of the onigiri and serve immediately.
