Ingredients
- 2 tablespoons Avocado oil
- 4 Rib Eye Steaks
- Salt to taste
- 2 tablespoons Butter
- ½ cups Onion, or shallot, diced
- 8 ounces, weight Baby Bella mushrooms, sliced
- 2 cloves minced garlic
- 1 tbsp Worcestershire
- 1 tbsp Dijon Mustard
- 1 cup Heavy cream
- ½ teaspoon Xanthan gum
- Salt and pepper to taste
- Fresh parsley, to garnish
Preparation
Heat the avocado oil in a skillet over medium-high heat.
Generously season both sides of the rib eye with salt. Sear steaks in hot skillet (2 at a time) to desired steak temperature. I prefer 135ºF for the medium. Remove the steaks to a plate and let rest.
Reduce heat to medium and add butter and onions. Cook for 5 minutes. Add mushrooms and garlic. Cook 5 more minutes.
Add the Worcestershire, Dijon, heavy cream and xanthan gum. Stir well and bring to a boil to thicken. Taste for seasoning and season with salt and pepper to taste.
Slice the steak into 1-inch pieces and serve on plates topped with cream sauce. Garnish with parsley and more black pepper if desired.
Note: Xanthan gum is a keto-friendly ingredient, perfect for thickening and emulsifying sauces. You can find it in the bakery aisle of most major grocery stores.
