I wanted to start the day with a boost of energy, so I made a super delicious breakfast.

Ingredients
- 2 Eggs
- 1 pinch Salt
- 1 Baby squash, diced
- 4 Small mushrooms, sliced
- 3 tablespoons Cream cheese
- 1 Small green onion, chopped
- 5 Cherry tomatoes, diced
- 1 Small hot pepper, diced
- 1 tbsp Chopped parsley
Preparation
Whisk the eggs with a pinch of salt and set aside.
In a skillet over high heat, sauté the summer squash and mushrooms for 5 minutes. Transfer to a bowl and let cool.
In the bowl, add the cheese, green onion, parsley, tomatoes and pepper.
Heat a 26 cm diameter frying pan. Pour in the beaten eggs and tilt the pan to spread it evenly. Cook with the lid on, without turning it over.
Assemble the “tortilla”, wrapping the vegetable mixture. Serve with hot sauce.
