A healthier alternative and a great brunch idea!
- 1 cup Fresh or frozen blueberries
- 1 whole beaten egg
- ⅔ cups Milk
- ¼ cups Melted butter
- 1-½ cup Oatmeal, quick oats works well in this recipe
- ¼ cups Cane sugar
- 2 teaspoons baking powder
Thaw and drain frozen berries.
Mix egg, milk and melted butter.
Combine rolled oats, cane sugar and baking powder. Gradually add to egg mixture. Mix blueberries.
Use a 1/4 cup measuring cup to drop the batter onto a hot, greased skillet. When the underside is nicely browned, quickly turn over and brown the other side.
That makes 8 pancakes.
