Walnut cookies are the best way to celebrate the holidays. As Christmas approaches, we not only bake gingerbread cookies, but also almond cookies. These cookies will decorate your table, and are healthy and delicious.

- 2 tablespoons coconut oil
- 1 tbsp Maple syrup
- 1 tbsp Almond butter
- ½ Banana, Puree
- 1 pinch Salt
- 1 cup Ground hazelnuts
- 1 cup Ground almonds
- 1 tbsp oats
- 50 grams Whole almonds
Preparation
Mix coconut oil, maple syrup and almond butter. Add mashed banana and salt and mix. Pour in the ground hazelnuts and almonds and oats. Mix again. The dough should be firm but flexible.
Heat the oven to 200°C (390°F) and line a cake tin with parchment paper. Take a small piece of dough, form a small ball and put it on the mold. Press the dough and add some whole almonds for decoration. (I was able to form 6 cookies with the dough.)
Bake for 15 to 18 minutes. Take out of the oven and let cool down.
