Soft, sticky and fluffy. These no-bake date rolls are a quick and easy treat to make, with just five ingredients! A classic treat from Northern Ireland.

Ingredients
- 110 grams Butter
- 85 grams Dark brown sugar
- 225 grams Chopped dates
- 55 grams Rice Krispies
- 10 grams desiccated coconut
Preparation
Melt the butter, sugar and chopped dates in a saucepan, stirring frequently, until it turns into a thick, sticky paste. Cool this sweet date paste slightly, then add the Rice Krispies and mix well.
Roll into a log shape on a sheet of parchment paper and cover the outside with coconut. You may need to smash and smash it a bit to get the shape you want and you can use the parchment paper to help if you don’t want your hands to get too sticky.
Wrap tightly in the parchment paper and twist the ends to seal and prevent the coconut from escaping. Place in the fridge to set. Slice and enjoy!
Notes: It’s not really necessary to measure the coconut, just use enough to cover the roll.
