- FOR THE VINAIGRETTE:
- 1 tbsp White vinegar
- 2 tablespoons extra virgin olive oil
- 1 teaspoon Dijon Mustard
- ½ teaspoon Dried oregano
- 1 teaspoon Lemon juice
- 1 pinch Salt
- 1 pinch Black pepper
- FOR THE SALAD:
- 4 cups mixed greens
- 1-½ cup Red cabbage, chopped
- 1 Avocado, diced
- 1 cup blueberries
- 1-½ pound Chicken, Cooked And Shredded
Preparation
For the dressing:
In a small Mason jar, add the white vinegar, extra virgin olive oil, Dijon mustard, dried oregano, lemon juice, salt and pepper. Close the lid and shake until just combined. Reserve until use.
For the salad:
In a medium bowl, combine mixed greens, red cabbage, avocado, blueberries and shredded chicken. Drizzle with vinaigrette and enjoy!
