This sweet watermelon kefir slushie tastes refreshing with a hint of tart lime flavor. Unlike most fruit granitas, this watermelon kefir granita only has about 120 calories per serving. It’s a perfectly healthy summer treat.

- FOR THE WATERMELON KEFIR JUICE:
- 16 ounces, weight Diced watermelon cubes
- 10 sheets mint
- ¼ cups water kefir
- FOR THE WATERMELON SLUSHIE:
- 24 ounces, weight Frozen Diced Watermelon Cubes
- ¾ cups Watermelon kefir juice
- 1 Lime, Juice
- ⅛ teaspoons Sea salt
- 2 strands Mint, To Garnish
Preparation
For the watermelon kefir juice:
Mix the watermelon cubes with the mint leaves until smooth. Pour through a fine mesh strainer over a large bowl to catch the juice. Discard the pulp.
Pour watermelon juice into a glass jar and add water kefir. Cover with a lid and let stand at room temperature for at least 18 hours.
For the watermelon slushie:
Line the baking dish with parchment paper, then place the diced watermelon cubes in the baking dish. Freeze 4 hours until firm.
Add all the watermelon slushie ingredients to a blender. Blend until smooth. Garnish with sprigs of mint and serve immediately. If desired, add a natural sweetener, such as pure stevia extract powder, for added sweetness.
