Mexican street corn is made with charred sweet corn, onions, jalapenos, lime juice and seasonings, mixed with mayonnaise. It’s a spicy and creamy side dish perfect for a backyard BBQ or Taco Tuesday.

Ingredients
- ¼ cups Mayonnaise
- 1 whole Jalapeño, chopped
- 2 tablespoons Red onion, chopped
- ½ tablespoon Garlic
- ½ teaspoon chili powder
- ¼ teaspoons Black pepper
- 1 whole Lime, Juice
- 1 tbsp Cilantro, chopped
- 1 tbsp Softened butter
- 3 whole Sweet Corn on the Cob
Preparation
In a small bowl, combine mayonnaise, jalapeño, onion, garlic, chili powder, pepper, lime juice and cilantro.
Butter the corn. Grill corn for about 10 minutes, charring on all sides. Remove from grill.
Cut the kernels of corn off the cob into a large bowl. Mix with the mayonnaise mixture.
