A simple baked potato covered in your favorite mayonnaise and grilled. You will be surprised with the result and the flavor.
- 1 whole Baked potato, cleaned
- ½ cups Mayonnaise
- Salt to taste
- Fresh shallots, thinly sliced (optional)
That’s it. Really simple stuff going on here for your grilling needs.
Start slicing the cleaned baked potatoes about 1 inch thick, about 3/4 the way deep. You still want them to stay intact, but not fall apart. It’s kind of like a potato, but a thicker slice.
Lather the mayonnaise all over and in the crevices of the potato. Season with salt.
Now you can bake them in the oven if you want and roast like you normally would, but my grill was working that day and I decided to put them on the grill for a bit more flavor. Whichever way you decide to cook them, simply cook them until fork tender.
Once cooked, place them on a serving plate and shower them with fresh green onions.
