I believe nachos should be a meal and not just fries with melted cheese drizzled on top.
I know what I will have when the volcano explodes! And that’s all.

Ingredients
- ½ bags (11-13 oz size) Tortilla Chips
- 1 cup grated mexican cheese
- 1-½ cup Chilli Margaritaville (See My TK Recipe Box)
- 1 cup pico de gallo
- 1 cup Guacamole
- ½ cups Sliced Jalapeños
- 1 cup Sour cream
- ½ cups Fresh cilantro, stems removed
Preparation
Preheat the oven to broil.
In a medium bowl (or the size of your choice), layer the chips, then cheese, pepper, pico de gallo and more cheese. Repeat, reserving pico de gallo for garnish.
Place a plate or baking sheet on top of the bowl. Carefully, while holding both the bowl and the plate or pan, turn them over. Remove the bowl – you should end up with a “volcano” of nachos.
Broil in the oven for 2-4 minutes until heated through and the cheese on top has melted. Top with guacamole, pico de gallo, jalapenos, sour cream and cilantro.
