Ingredients
- FOR THE DONUTS:
- 1 cup All purpose flour
- ½ cups very fine sugar
- 1 teaspoon baking powder
- 1 tbsp Cocoa powder
- ½ teaspoon Cinnamon
- 1 pinch salt
- 3 tablespoons Milk
- 2 tablespoons Fresh lime juice
- 1 teaspoon Fresh lime zest
- 2 tablespoons Olive oil
- 1 tbsp Tequila
- 1 whole Egg
- FOR THE GLAZE:
- 1 cup Granulated sugar
- 2 whole Limes, Juice
- ¼ cups Water
- Lime-infused sea salt, to sprinkle on top
Preparation
Preheat the oven to 375°F and spray a 6-well donut pan very well with cooking spray.
Whisk flour, sugar, baking powder, cocoa powder, cinnamon and salt in a bowl. Prepare a stand mixer with the paddle and combine the milk, lime juice, lime zest, olive oil, tequila and egg in its bowl. Beat well, then slowly pour in the dry ingredients until you get a nice batter. Transfer the batter to a piping bag and pipe evenly into the donut pan. Bake the donuts for about 15 minutes, until puffed and golden around the edges. Take them out and let them cool for half an hour.
While they cool, prepare the easy frosting. Simply mix powdered sugar, lime juice and water in a bowl. Dip each donut in the glaze to submerge half of it, then place the donuts on a plate glazed side up. Sprinkle lime sea salt on top, then serve and enjoy! They also keep well for a day sealed.
