A simple recipe for gluten-free, low glycemic index and simply delicious granola!

Ingredients
- 1-½ cup Oatmeal
- ¼ cups Cashew chunks
- 1 tbsp Chia seeds
- ¼ teaspoons Cinnamon
- 1 pinch Salt
- 2 tablespoons melted coconut oil
- ¼ cups cashew butter
- 2 tablespoons Maple syrup
- 1 whole Egg white
- ¼ cups dark chocolate chips
Preparation
Preheat oven to 350ºF and line a baking sheet with parchment paper.
Put all the dry ingredients (except the chocolate chips) in a large bowl.
In a small bowl, melt the coconut oil and cashew butter together. Stir in maple syrup. Pour the wet into the dry and stir until well blended. Break in the egg white and mix until well blended.
Place on the baking sheet in a single layer and bake for 15 minutes. After 15 minutes, stir the granola and break up any large clumps. Bake another 10 to 15 minutes until golden brown.
Leave to cool for 10 to 15 minutes before adding the dark chocolate chips. Store in a mason jar.
