Ingredients
- 2 cups Plain flour
- 2 cups Water
- 1 cup Butter
- 1 cup Sugar
- ½ cups Buttermilk
- 2 whole Eggs
- 2 teaspoons Vanilla
- 2 teaspoons baking powder
- For the mango glaze:
- ½ cups Mango
- 2 cups Granulated sugar
- 3 tablespoons Milk
Preparation
In a large bowl, cream the butter and sugar. Add vanilla, baking powder and eggs one at a time.
Gradually add the flour, alternating with the buttermilk. Stir until just combined, do not over mix.
Pour into a greased 6 inch Bundt pan. Wrap in foil.
Pour water into Instant Pot. Install the trivet and place the tube pan on the trivet.
Cook on manual high pressure for 30 minutes, then allow pressure to release naturally.
Whisk together the Mango Frosting ingredients until smooth. Pour over the cake. Allow to harden for at least 30 minutes.
