Oatmeal with apples and raisins is the perfect energy breakfast for busy mornings. Simply whip up a batch at the start of the week and enjoy hot, sweet, satisfying breakfasts all week long!

Ingredients
- 3 whole Apples
- 4 cups Unsweetened almond milk
- ½ teaspoon Salt
- 2 cups Old fashioned rolled oats
- 1 cup Raisins
- ¼ cups brown sugar
- 2 teaspoons Vanilla extract
Preparation
Cut the apples into small 1/2 inch cubes. Be sure to remove the seeds! Put aside.
Over medium heat, in a large saucepan, heat the almond milk and salt until the almond milk is steaming (but not boiling!). Then add the rolled oats. Cook over medium heat until the oats have absorbed all the almond milk, stirring occasionally. This may take 5-12 minutes depending on the size and temperature of your pan.
Reduce the heat to a minimum. Add cubed apples, raisins, brown sugar and vanilla extract and stir to combine. Cook 1 to 2 minutes over low heat. Serve immediately or refrigerate for future use.
Note: When reheating the rolled oats, add 1-2 tablespoons of water or almond milk to the rolled oats, microwave for 1 minute, stir and enjoy!
