Ingredients

  • 1 pound Cauliflower, cut into florets
  • 2 tablespoons Butter
  • 4 teaspoons Almond powder
  • 4 teaspoons Coconut Flour
  • 1-½ cup 2% Milk (or Almond)
  • ¾ teaspoons Salt
  • ¼ teaspoons onion powder
  • ¼ teaspoons garlic powder
  • ⅛ teaspoons Pepper
  • 1 cup Wrapped, Shredded & Split Cheddar Cheese (or Non-Dairy)

Preparation

Turn the oven to 375ºF and bring a large pot of salted water to a boil. Add the cauliflower (once boiling) and cook until just beginning to become tender, about 5-7 minutes. Drain well then spread on absorbent paper. Use another layer of paper towel to gently squeeze as much moisture as possible onto the cauliflower.

While the cauliflower cooks, melt the butter in a medium skillet over medium-high heat. Once melted, add almond flour and coconut flour and whisk, stirring constantly, until beginning to brown, about 1 minute.

Stir in milk, salt, garlic and onion powder and pepper until smooth and bring to a boil. Once boiling, reduce heat to medium, stirring occasionally, until mixture is very thick, about 7 to 8 minutes. Remove milk mixture from heat and stir in 1/2 cup cheese until smooth.

Spread 1/3 of the sauce in the bottom of an 8 × 8 inch pan. Pack the cauliflower in the pan on top, then pour the rest of the sauce over the top. Sprinkle with remaining cheese.

Bake until golden and bubbling, about 25 to 30 minutes. If desired, toast for 2-3 minutes until golden brown. Leave to rest for 5 minutes and devour!
