Quick and easy coconut lime rice that’s the perfect side dish and a great way to jazz up your usual plain rice!

Ingredients
- 1 tbsp Butter without salt
- 1 cup Long grain white rice
- ¾ cups Coconut milk
- 1 cup Water
- ½ teaspoon Salt
- ¼ teaspoons Pepper
- 1 whole Lime, juice and zest
Preparation
In a large saucepan over medium heat, melt the butter, then add the rice and cook, stirring, for 1 to 2 minutes. Add the coconut milk, water, salt, pepper, lime juice and zest and bring to a boil. Reduce the heat to low, cover and cook for 15 minutes.
Remove the pan from the heat and let stand 5 to 10 minutes. Stir the rice with a fork and enjoy!
