- FOR THE DOUGH:
- ½ cups Cane sugar
- ⅓ cups Butter
- 1 cup Quaker Quick Oats
- FOR FILLING:
- 1 cup Sugar
- 3 whole Eggs
- ½ cups Lemon juice
- 1 teaspoon Vanilla
- ⅓ cups Cornstarch
- ¼ cups Powdered sugar, for the top
Preparation
Heat the oven to 350ºF.
In a large bowl, combine the cane sugar and butter. Mix well. Add rolled oats and cut with a fork or pastry blender until well blended. Press into bottom and halfway up sides of 9-inch pie pan.
Bake crust at 350ºF for 20 minutes or until lightly golden.
Meanwhile, prepare the garnish. Place sugar and eggs in a large bowl. Add lemon juice and vanilla. Whisk well together. Add cornstarch and whisk until smooth.
Pour the filling into the crust and return to the oven until the filling is set, about 20 minutes. Insert a butter knife into the filling; if it comes out clean, the filling is ready.
Remove from the oven and let cool for 10 minutes. Sprinkle with powdered sugar.
