- 1 tbsp Olive oil
- 2 cloves minced garlic
- 1 Medium shallot, very finely chopped (about ¼ cup)
- ¼ teaspoons Ground sea salt
- ⅛ teaspoons Freshly ground black pepper
- 2 cans (16 Oz. Size) Garbanzo Beans (Chickpeas), rinsed and drained
- 2 tablespoons Chopped fresh tarragon
- ¼ cups Roasted pine nuts
- 1-½ tbsp Fresh lemon juice
Preparation
In a medium skillet, add olive oil over medium heat. Add minced garlic and cook for 1 minute. Add the shallots and cook, 2 to 3 minutes, until the shallots are tender. Add sea salt, black pepper and chickpeas. Heat for 5 minutes or until hot, stirring occasionally.
Remove from the heat and stir in the tarragon, pine nuts and lemon juice. Serve hot.
